Abstract
A method for the determination of traces of gallotannins in beer, in the presence of other natural tannins, has been developed. The procedure is based on the formation of a deep blue iron-tannin complex which is evaluated spectrophotometrically at 530 nm. Dimethyl sulfoxide is used to solubilize a haze that usually forms. Reproducibility of the method is quite good.
